Summer Salads: KickAss Citrus Chicken and Feta Salad

It’s summer at last! Bring on the cookouts and BBQ’s and beer! There are few things I like more than hanging out with friends during the summer while the grill is burning, but sometimes it’s nice to have a cool salad to go along with your sizzling grilled stuffs. And thats where this salad comes in. It’s got the flavors of citrus, added with the tanginess of feta cheese for just the right kick! So next time your craving something with the flavors of summer, try this out…we know you’ll like it!

Ingredients:

  • 4-5 chicken breasts
  • 1 lemon
  • 1 lime
  • 1 orange
  • 2 large cloves of garlic
  • olive oil
  • salt
  • pepper
  • Feta cheese
  • dried cranberries
  • roasted pecans
  • mixed greens or spinach

Method:

In a large plastic zip bag, put the zest of the lemon, lime and orange in, along with the juice of the orange and 2 TBSP of olive oil. Add in a pinch of salt and a lot of pepper. Finely chop 1 clove of garlic and throw it in as well. Mix all this up, and add your chicken breasts and let them marinate for at least 2 hours. Next, heat up your grill or skillet. Cook the chicken until done and set aside. Now take the juice from the lemon, and the juice from the lime and mix it in a bowl with 2 TBSP olive oil, salt, pepper, and 1 clove of garlic. Mix this up and set aside. Now for the salad! In a large bowl, toss your field greens with your dried cranberries, pecans, and feta. Next take your chick and slice it thinly and lay on top of the salad. Then drizzle with your lemon/ lime dressing!
