Rustic Roma Tomato Basil Soup!

IT’S FREAKING COLD!! ha Right now here in KickAssVille we are experiencing an ice storm and temperatures of about 20 degrees! COLD! Luckily, my work is closed today so it’s a friday I get to spend doing whatever I want at home. Which means that I’ll probably end up sledding down some stairs or creating a house full of traps like Kevin McCallister. Ha. Or I’ll end up making this awesome recipe again! Whenever it’s colder than your ex-girlfriends heart outside, I always like to make up some chili or a big pot of soup! Not only does this use up a lot of the crap thats been stored in the fridge since 1 A.D., but it makes the house smell awesome as well! So if your stuck in the house or whenever your just enjoying a cold day, this KickAss tomato basil soup will surely be a great way to warm up a little bit.

Ingredients:

  • 3 pounds plum tomatoes, halved lengthwise
  • 2 tablespoons olive oil
  •  4 cloves garlic, unpeeled
  • 1 teaspoon finely chopped fresh thyme leaves or 1/4 teaspoon dried
  • 1/4 teaspoon (or more to taste) dried crushed red pepper
  • 4 cups chicken or vegetable stock
  •  1 Tbsp tomato paste
  • 1 Cup heavy cream
  • 9 basil leaves or more
  • salt and pepper to taste

Method : 

Preheat the oven to 400 degrees. Half those tomatoes and lay them out on a baking sheet all nice like. Wrap your garlic up in some aluminum foil and place it on the tray with your tomatoes. Now salt and pepper those tomatoes very liberally! Then drizzle some olive oil on them fo shizzle. Throw them things in the oven and let them roast for an hour. When they are done, take them all out and throw them in a blender along with 3 of the basil leaves and hit go until its nice and chopped up. Then put that mixture in a large pot with the chicken stock, red pepper flakes, thyme, tomato paste.  Bring this mixture to a boil and then reduce the heat to a simmer for 5 minutes. Add the rest of the basil and the cream, Be sure to chop those basil leaves up doing a chiffonade! Stir everything together and let simmer for 25 minutes, then your ready to enjoy this kick ass  soup with a nice crusty bread, some cheddar cheese, cheezits or whatever you feel like!
