Restaurant Style KickAss Queso!

How many times have you ever been into a mexican restaurant, having a few dos XX with a few friends when suddenly, the waiter brings out that bowl of white hot cheesey goodness known as queso? Everyone grabs chips and before you know it the whole bowl is empty! What do you do now?? We’ll if your curious like me, you ask a the waiter how they make it with the hope they’ll give you an answer without having to kill you! Lucky for me, i’m still alive! So I took they’re recipe and added a little bit to it to make it my own, and so others could enjoy it at home as well!

BTW…mexican restaurants have to use pasteurized cheese so i’m pretty sure this is how 99% of them make their queso. Now if i can just figure out the salsa…hmm…..


  • 9 oz. of good quality ( funny, i know..right?) white american cheese.
  • 1/3 cup pickled jalapenos
  • 2 TBSP pickled jalapeno juice
  • 1/3 cup milk or more if you want it thinner.
  • 1 tsp of garlic powder

Method :

First take your jalapenos and juice and process them in a blender until they are nice and finely chopped. Then put them, along with the rest of the ingredients into a saucepan on medium heat. Let this white goodness heat up and melt, stirring occationally. That’s it! It really is that simple! Now you can add more jalapenos, pepper flakes, real garlic, or whatever you like to your taste, but this alone will hold you over when you get those cravings for restaurant queso!
