Quick and KickAss Tzatziki!!

HOLY CRAP ITS COLD!! So hopefully this finds you wrapped up somewhere warm during this crazy winter weather we are having! And while normally I love the cold, it’s just a little too much when its -2 degrees during the day. But, what better excuse do you have to make some warm pita bread or gyro meat and enjoy it with this awesomely easy and KickAss tzatziki! This recipe comes from Ina Garten….I know ….I know…. but while the woman is about as annoying as a sasquatch baby crying for milk, she does make some good food from time to time! You can also check out her fontina cheese dip we have somewhere on this vast site of ours. So bundle up, cook up something warm and dip that shizzle into this awesome sauce!!

Ingredients:

  • 2 (7 ounce) containers of greek yogurt
  • 1 medium cucumber,unpeeled and seeded
  • 1/4 cup of sour cream
  • 2 TBSP freshly squeezed lemon juice
  • 1 TBSP white wine vinegar
  • 1 TBSP fresh minced dill
  • 1 1/2 teaspoons minced garlic
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper

Method:

Grated your cucumber and squeeze it with your hands to remove as much water as humanly possible. This will be a never ending task because they are like 99.9% water. Next just mix everything into a big bowl and let sit for around 20 minutes so that the flavors can meld together all nice like. Now eat that shizzle!
