Parmesan Crusted Tilapia!

So I’ve been trying to clean out all the stuff in my fridge lately. This in and of itself can be a scary task sometimes, especially if you live with roommates that never clean anything, and constantly shove things to the back of the fridge! Just like that lime that somehow turned into what looks like a melted furry skittle, or a gremlin that had been dipped in water…..mmm……Luckily, I don’t have any mogwai in my fridge or freezer that I know of, but what I did have an abundance of was tilapia! Tilapia is a great fish that is light, flakey, and really easy to do lots of things with. Its kind of like the chicken of the sea ( right jessica?) or river or lake or wherever you want to get your fish. In any case, this recipe is really flavorful, easy and quick to make in a pinch for dinner. Serve it over some of our cheesy risotto or some rice, and BAM! instant KickAss dinner for less that what you would spend at Olive Garden.


*You can substitute chicken for the tilapia if you wish, it’ll still be KickAss!


  • 4 (6 ounce) tilapia fillets
  • 1 cup flour (for dredging)
  • 1 egg, slightly beaten
  • 1/4 cup flour
  • 1/2 cup parmesan cheese, grated
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, chopped
  • 1 1/2 teaspoons capers, drained
  • 1 lemon, juice of
  • 2 tablespoons white wine
  • 1/4 cup chicken stock
  • salt and pepper, to taste
  • 1 tablespoon unsalted butter


Prepare Parmesan flour by combining 1/2 cup flour and parmesan cheese in a pan, and set it aside.Dredge fish in plain flour, shaking off excess flour (just shake it like a polaroid picture….HEYYYYYYYY YAAAAAAA) .Dip in egg wash.Coat in parmesan flour mixture.Heat non-stick frying pan with olive oil (almost smoking).Brown fish or Pollo( thats chicken in spanish) on both sides, remove from pan and keep warm.In the same pan, add more oil if needed, and sauté garlic.Add capers, lemon juice, wine and stock, salt and pepper Reduce by half, remove from heat.Add butter and melt through. Once your sauce is ready, just put your fish on the serving plate and spoon it over the top making sure to get it all in the nooks and crannys. Enjoy!
