Mexican Street Corn!

With summer coming to a close there is still some time to get in a few more cookouts before the leaves start turning colors. And although with the fall comes tailgating, and everything pumpkin, we still enjoy a good old fashioned summer cookout more than anything. So for your next cookout we ask… BEG! ha! that you try this mexican street corn recipe!

A staple of street food in mexico, street corn ( or otherwise called elotes) is served all over and incorporates all the awesome flavors that mexican food is known for. Trust us, once you try it you’ll never want to eat corn any other way! Enjoy!


  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup finely shredded mexican cheese, plus more for serving ( personally I used habanero jack cheese!)
  • 1/2 teaspoon ancho chili powder ( or your fav chili powder), plus more for serving
  • 1 medium clove garlic, finely minced (about 1 teaspoon)
  • 1/4 cup finely chopped cilantro leaves
  • 1/2 tsp of salt and pepper each
  • 4 ears corn, shucked
  • 1 lime, cut into wedges


FIrst start off by heating up your grill!  Whether its charcoal or gas, fire that goblin up and let it start pre-heating. While the grill is getting all hot and bothered, mix together the first 7 ingredients in a large bowl and set aside. Once your grill is heated, place your corn on to the grill and grill each side until slightly charred, about 8 minutes total. Finally, transfer these awesome golden nugget holding rolls to a plate and slather on your cream mixture. Top with more cheese and chili powder if desired and serve with a lime wedge to add that finishing touch to this amazing mexican street food!
