KickAss Spicy Sausage and Rice!

Hello there! Been a while, but yes, we are still alive and hungry! Are you??? Well in case you are and find yourself in need of a quick way to get rid of some left over stuff you may have in your fridge, look no further! First off, we can’t say enough about Gordon Ramsay’s ¬† ultimate cookery course! It’s packed full of good recipes and just awesome food knowledge that will make you a better cook! And this is one such recipe. Take leftover sausage, rice, a few veggies and turn them into an awesomely KickAss meal to satisfy even the hungriest of hungry! Enjoy!

Ingredients :

  • 1/2 red onion
  • 2 large cloves of garlic
  • 2 red chili peppers ( adjust to taste)
  • 1 heaping Tsp of smoked paprika
  • 1 cup uncooked rice
  • 3 large sausages, cut up
  • 1 glass of white wine ( more if you plan on drinking it ha)
  • 2 cups of chicken stock
  • 1 ripe tomato
  • 1 bunch green onions
  • olive oil
  • salt and pepper

Method : 

First add oil to a large pan or pot that has a lid. Let it heat up and add in the chopped red onion. Cook the onion until its soft but not ¬†colored. Then add in the chili pepper and garlic and cook for another minute or 2. Once all this goodness is cooking down, throw in your cut up sausage and cook for another 2 or 3 minutes. Then add in your rice and let it toast for a minute. After everything is nice and toasty, toss in that glass of wine to deglaze the pan ( if you haven’t decided to drink it by now ha!). Stir everything around getting all those nice brown bits off the bottom of the pan! Next, throw in your paprika, salt and pepper and give everything a good stir. Add in a cup of the chicken broth, and bring it all to a simmer. Lower the heat, and place the lid on your pot for 5 minutes. After 5 minutes, check the rice, and add more stock if needed. Continue to cook covered until all liquid is absorbed and the rice is nice and fluffy!

To serve, finely chop the onion and tomato and add to each individual serving of the sausage rice.
