KickAss Spicy Black Bean Burgers!

It’s Sunday, and despite the fact that this is supposed to be a day of rest, I’ve been waaaay too productive already! And doing all this work made me get the munchies super bad, so I looked in my cabinet to see what I had……….nothing! Well, not really nothing, I did have just enough stuff stashed away to make these KickAss burgers that I’d been wanting to try out for some time! I’ve never made a black bean burger, so this was an interesting experiment. But it turned out great! Black beans, mixed with oats, bell peppers, feta, and a few other things, I mean c’mon, what’s not to like. It’s a great way to enjoy a burger, and if you have any of those weird vegetarian friends that you like to cook for, well, they may like it too! Top it with some chipotle mayo and some avocado and enjoy!

Ingredients:

  • 16 oz can black beans, rinsed and drained
  • 1/2 red bell pepper, chopped
  • 1/2 cup chopped green onions
  • 3 tbsp chopped cilantro
  • 3 cloves garlic, peeled
  • 1/4 cup feta cheese, crumbled
  • 1 egg
  • 1 tbsp cumin
  • 1/4 to 1/2 tsp kosher salt
  • pepper
  • 1 jalapeno, diced
  • 1/2 cup quick oats
  • 4 whole wheat buns
  • 1 small avocado, sliced thin

Method :

Rinse the beans and set them aside to dry for at least 20-30 minutes on a paper towel. Then mash them with a fork in a large bowl. In a blender or food processor add the garlic, bell pepper, cilantro, onion, jalapeno and finely chop. Then add the oats, egg, spices, salt and pepper. Chop once or twice, then add to the beans along with the feta cheese. Stir this together well, and then form into patties. Lay the patties out on a baking sheet that has wax paper on it. If the patties seem to wet, put them in the refrigerator for 20-30 minutes. Once the burgers are solid, you can cook them on the grill or on the stove top to your desired doneness, or about 7 minutes each side. Spread some chipotle mayo ( mayo and chipotle tobasco mixed) on your buns, add the burger and then top with sliced avocado for a bombtastic meal that even sweet brown has time for!!
