KickAss Grilled Wild Salmon Sandwich!

If you’ve never had grilled salmon before then you don’t know what your missing out on! Even if your not a fish/seafood person I can bet that you will like salmon, and this recipe marinated in balsamic vinegar, lemon juice, olive oil, and garlic is sure to sway your taste buds. Add to it some great focaccia bread, roma tomatoes, and cilantro aioli and it all adds up to one KICKASS sandwich!

Ingredients:

  • 1 loaf of focaccia ( cut into 6 equal squares)
  • 4 ¬†wild salmon fillets or steaks
  • Roma tomatoes
  • Your choice of lettuce ( I like field greens! )
  • 1 chipotle peppers ( chopped)
  • 1/4 cup and 1 tbsp lemon juice
  • 1/2 cup mayo
  • 1/4 cup of chopped cilantro
  • 3 tbsp olive oil
  • 2 tbsp ¬†balsamic vinegar
  • 1 sprig of rosemary
  • 1 large clove of garlic (roasted)
  • sea salt to taste
  • pepper to taste

Method:

First things first, mix the 1 tbsp lemon juice, mayo, chipotle pepper, and cilantro in a bowl with a pinch of salt and pepper to taste. Set this aside. Then combine the 1/4 cup lemon juice, garlic, olive oil, balsamic vinegar, salt and pepper in a blender and blend until combined. Pour into a large ziplock bag on top of the salmon fillets, and add the leaves from the rosemary sprig. Mix well and let marinate for at least 1-2 hours.

Meanwhile, preheat your grill and get it all nice and hot like. Make sure your grates are clean and well lubed. You can do this by holding a towel in some tongs and pouring canola oil on it and then wiping your grate with it. Once the steaks are marinated, grill them over medium indirect heat for about 3-4 minutes on each side or until the fish is opaque and flaky.

Now to assemble the sandwich! Take the focaccia and slice it in half. Toast it for a minute or 2 on the grill. Spread some of your mayo mixture on the bread, then add your grilled salmon, then sliced roma tomatoes, then the lettuce, and top with the top piece of bread.
