KickAss CousCous Salad!

Another lazy sunday! And what does that mean? It means that we get to actually cook some stuff!! Later on we are going to be roasting a chicken ( and it will be posted if it gets the KickAss approval!), but for lunch we decided to make this KickAss CousCous salad. This salad is an attempt to mimic the couscous that we served at a restaurant I used to work at, and is great as a side item or eaten as a light meal by itself! Plus its a nice change of pace if your looking for something different to try out!



  • 1 cup pearl couscous
  • 1 tsp butter
  • 1 1/4 cup water
  • 4 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 4 tablespoons fresh chopped cilantro
  • 1 red chili pepper
  • 8 oz. cherry tomatoes, halved
  • 1 medium zucchini
  • 1 large clove of garlic
  • 1/2 cup of feta ( optional)
  • Salt and pepper to taste


To make the couscous, boil the water then turn the heat down to low. Add the couscous, butter, and a little salt. Cover and let simmer for 8-10 minutes. Meanwhile, chop all the veggies and cilantro and set them aside. When the couscous is done cooking, add it to a big bowl along with the veggies, cilantro, oil, feta and lemon juice. Salt and pepper to taste, and enjoy this awesomely light, and KickAss salad.
