KickAss Beef Stroganoff!!

Another hearty dish for the fall months and one of my favorites! Beef stroganoff!!! I mean seriously, what’s not to like about beef, sour cream, wine, …ok….I’ll stop. ha. Making myself hungry again. This is truly a great meal and one that only gets better the next day!

Ingredients :

  • olive oil for frying
  • 8 ounces mushrooms, sliced
  • 1 medium onion, diced
  • 1 (20-ounce) sirloin steak, cut into 1-inch strips
  • Flour mix for dredging
  • 1/2 cup white wine, plus more for deglazing pan
  • 16 ounces beef stock ( or chicken)
  • 1 pint sour cream
  • 1 tablespoon Worchestershire
  • Salt and pepper
  • Egg noodles
  • Red pepper flakes ( optional )
  • Garnish: parsley

Method : 

Set a pot of  salted water on medium heat while you do the rest.

Flower Mix:
1 cup of flower, 1 1/2 tsp salt, 1 tsp pepper, 1 tsp paprika. Mix together in a bowl.

In a large pan, heat up some olive oil and saute the mushrooms until they cook down. Add the diced onion and cook down. Don’t forget to salt and pepper them!! While those 2 things are cooking down in the hot tub, dredge your meat in the flower mixture making sure to shake any excess off, set aside. Once the mushrooms and onions have sufficiently cooked down, remove them from the pan and set aside. Add a little bit more olive oil and proceed to cook your beef strips. By now you should be getting hungry!!. Once the beef is cooked, add in a little white wine to deglaze the pan making sure to scrape the bottom and get the fond off AKA the good stuff! Add the mushroom mix back in, the broth, 1/2 cup of wine, worchestershire, and half the sour cream. Stir this thick bitch up! Once everything is combined, let simmer for 20 minutes or so until the sauce thickens up. You can also add more salt, pepper, and the red pepper flakes now!

About ten minutes in, throw those egg noodles in the pot you started earlier. This will make it so that they are done almost the same time as your sauce! Once they are cooked, just drain them and add them to your pan with everything else and stir! This will allow the noodles to soak up awesome KickAss juices!
