Fiery Blackened Chicken Sandwiches!

OK, this isn’t particularly a NEW post, but it is a different variation on one we’ve already displayed for your eating glory. Taking the same spice mix from our blackened tuna and using it on chicken breast marinated in hot sauce, and adding pineapple. What’s not to like??? It’s a great way to get rid of those winter blues and start thinking of summer cookouts!!


  • 1 bottle of Sweet Nasty hot sauce ( or other pineapple/mango/fruit based sauce)
  • 4 small chicken breasts
  • 2 tablespoons paprika
  • 1 tablespoon cayenne pepper
  • 1 tablespoon onion powder
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 tablespoon garlic powder
  • 4 tablespoons olive oil
  • 1/2 cup mayo
  • 1/4 cup sweet nasty ( or other sauce)
  • pineapple rings
  • lettuce
  • toasted buns


Mix the spices together, then set aside. Mix together the mayo and 1/4 cup hot sauce and set aside. Pour the rest of the hot sauce in a bag and throw your chicken in there to marinate for 3-4 hours. Once done, pull them out and barely pat dry. Coat both sides with the spice mixture. Heat the grill up to medium high. Cook the chicken for about 3-6 minutes each side or until done.

Toast your buns on the grill. Spread the mayo mix on the buns, then add chicken, top with a pineapple ring, and lettuce. Enjoy!
