Creamy Avocado Pasta!

Happy New Year!! So let’s recap….we survived the mayan/zombie apocalypse, another horrible Adam Sandler movie, and 1 more year with Justin Bieber on the planet. I know, I know….Bieber is still alive despite my…oops..I mean OUR trying, ha, but now that that’s all behind us let’s look forward to this awesome new year that is upon us! One of the things I’m going to do this year is try foods that I come across that sound weirder than a 3 legged spider monkey waving a lit sparkler. Weird right? So in that fashion I came across this recipe that looked weird (avocados and pasta??) but sounded kinda healthy and tasty. I took the leap and I’m glad for it! This pasta was KickAss!! Easy to make, and full of light flavor! If your not a fan of avocado’s then you might not like this….well…nevermind….you should make your unadventurous ass try it anyways! So here it is, KickAss creamy avocado pasta!

*quick tip: to select a ripe avocado press the top of it where the stem was connected. If it is soft then the avocado is ripe. If that thing is hard as brick then don’t even bother with it! To cut it, slice it vertically then spin it around the knife. Twist it and it should separate. Hit your knife into the pit of the avo and twist to remove! Scoop out the flesh with a spoon.


  • 12 oz. pasta¬†
  • 2 ripe avocados, pitted and scooped
  • 1 lemon, juice and zest
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 1 handful fresh basil
  • 1/4 tsp. kosher salt
  • Pepper
  • Freshly grated parmesan


Cook pasta per directions on the box until Al Dente ( not Al Roker….because then it would be burnt). While the pasta is cooking, throw that avocado, lemon juice, garlic, olive oil, basil and salt into a food processor and hit the go button! Once it has turned all cream and nice like set it aside until your pasta is done. Once the pasta is done, drain it and toss with your avocado mixture. To serve, top with lemon zest, parmesan cheese, and fresh cracked black pepper to taste! Now let your taste buds go down town to pound town!
