Ok, this one is for the salad people. You know who you are! Not naming any names, but I know there are weirdos out there whose meals only consist of 3 things, and salad happens to be one of them ( yes…I’m talking about you! ;-)). I’m not a strictly herbavorian (is that a word??) person, but I do enjoy a good salad every now and then as long as it is accompanied by a big steak or some form of meat! This is one of those salads that I enjoy time and time again, and is good to make in a huge bowl for parties or just a small bowl for your own eating pleasure. It does take some prep and it does have tomatoes in it! But the end result is worth it and it will surely be a KickAss addition to any meal that your planning!
- 3/4 cup canola oil
- 1/4 cup lemon juice
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 heads (1 pound each) romaine, chopped
- 2 cups chopped roma tomatoes
- 1 cup (4 ounces) shredded Swiss cheese
- 2/3 cup slivered almonds, toasted, optional
- 1/2 cup grated Parmesan cheese
- 8 bacon strips, cooked and crumbled
- 1 cup Caesar salad croutons
Mix up the canola oil, lemon juice, garlic, salt and pepper in a tight jar. You can shake it, mix it…whatever. Just make sure that awesome sauce is combined well! Next cut up your romaine lettuce ( or whatever kind of plain lettuce you prefer) And mix it up with the tomatoes, cheese, almonds, and bacon. If that’s not enough bacon….add more! Bacon never hurt anything!:) Then slowly drizzle that awesome sauce you made earlier over your salad, but do this a little at a time. You don’t want your salad to be drenched in it! Once your satisfied, add those croutons in there and toss that….errr…umm…give it another toss! Then put this big awesome salad on the table or individual bowls and let people dig in! We promise you’ll love it!
