Awesome Roast Chicken!

Ok, so as promised in the CousCous post, here is a recipe for some KickAss roasted chicken! Now you can do just about anything to a chicken when your roasting it, so feel free to add whatever you like, or take away what you don’t . We can promise you that it will still most likely be tasty! This recipe creates some smoke so be prepared to have a window open or and your fan on for a little bit, but the end result is worth it! Add to it a pan sauce made with white wine, and the result is an awesome dinner that would be AMAZING with mashed potatoes or some roasted veggies! ENJOY!2013-01-27_16-56-20_952

Ingredients:

  • 1 5-6 pound whole unfrozen chicken
  • 1 lemon, halved
  • 4 cloves of garlic
  • 4 Tablespoon of butter
  • paprika
  • cayenne pepper
  • olive oil
  • rosemary sprigs
  • salt and pepper
  • 1 cup dry white wine
  • 1 Tablespoon butter ( for sauce)

Method:

Preheat your oven to 475 degrees. While its preheating, take your chicken out of the packaging, and take out the innards that they stuck inside the cavity. Stand the chicken cavity side up and salt and pepper the inside of the cavity liberally. Stuff the lemons, garlic, a rosemary sprig, and butter inside the cavity. Drizzle a little olive oil in there as well.

Next, liberally salt and pepper the outside of the bird, and lightly drizzle it a little olive oil. Then sprinkle with paprika and cayenne to taste. Place a rosemary sprig under each wing.

Lay the bird breast side up in your roasting pan, and put in the over wings first. Set your timer for 10 minutes per pound of chicken. After the first 10 minutes, take a wooden spoon and move the chicken so it doesn’t stick. Then let it roast the rest of the time.

Once the chicken is ready, take it out and let it rest for at least 5-10 minutes so the juices won’t run everywhere! While that’s resting you can make the sauce.Discard all but a quarter of the fat that is in the pan. Place your roasting pan on an eye of the stove, and let it heat up. Add the wine and bring to a hard simmer. Scrape all of the yummy brown bits off the bottom of the pan. Once the liquid has reduced by half, pour the liquid through a fine sieve into a small saucepan. Warm the sauce and add the remaining 1 Tbs of butter until its melted. Place in a serving dish and place it on the table for dipping or pouring over the chicken! Did I mention this is KICKASS??
